The worm is actually a maguey larva, often called a gusano.
There are two main types:
Gusano Rojo (Red Worm): The larva of the Comadia redtenbacheri moth, which feeds on the agave plant.
Gusano Blanco (White Worm): Another species found on the leaves of the agave.
While they’re not traditionally used in mezcal, they are eaten as a delicacy in Mexico—often roasted, fried, or used in sauces.
